Cherry Chocolate Chip Chia Energy Bites

With social isolation in full effect due to the COVID-19 virus, I’m finding myself indoors more than I prefer to be. While I prioritize getting fresh air everyday either via going for a run or walk (even if it is just to the mailbox!), when I am indoors I often find myself wandering into the kitchen and opening the refrigerator or pantry more than usual. Never enough Avocado!

As we enter Labor Day weekend I wanted to share one of my favorite appetizer recipes that you can "make and take" to your holiday parties. There are a number of things I love about this recipe including how easy it is to make, how delicious it is to eat and how versatile it can be once complete. You get all of this in just 5 (sometimes I use 6) ingredients! So here it is- avocado salad. You can serve the recipe with chips (Stacy's pita chips or tortilla chips) or crackers - either are a good complement!
