Ginger Chocolate Energy Bites

You know those moments when you get home after a long day and need food but there is nothing prepared in the fridge so you end of up eating everything in the cabinets because its convenient? Next thing you know, you have eaten 2 or 3 (maybe 4 or 5 - ha!) servings of crackers, chips and anything else you can get your hands into.

To try and minimize these “hangry” (hungry + angry) moments, I have found preparing healthy, clean snacks can be a life saver for me! One of my go-to after work snacks is these ginger chocolate energy bites. In addition to enjoying these in the comforts of my own home, I also bring these on the road and on the trail because they travel well, are small and calorie dense so they hold me over until the next meal.

Ginger Chocolate Energy Bites

Yields ~15 bites depending upon how big/small you roll them

iNGREDIENTS

  • 1 and 1/2 cups old-fashioned rolled oats

  • 2 tbsp. coconut flakes

  • 2 tbsp. chocolate chips

  • 1/2 tsp. cinnamon

  • 1/4 tsp. salt

  • 1/2 tsp. grated fresh ginger (or 1/4 teaspoon ground)

  • 1/2 cup peanut butter (or almond butter)

  • 1/4 cup maple syrup (or honey)

DIRECTIONS

  • In a large mixing bowl, stir together oats, coconut, chocolate chips, cinnamon and salt.

  • Add ginger, peanut butter and maple syrup and stir together until mixture is sticky and holds together. If mixture is dry, add more maple syrup until sticky. Remember, mixture must be able to stick together for next step!

  • Use about 1 tablespoon of mixture to roll into your hands to form into a ball. Place bites in airtight container and store in fridge for up to 1 week.

  • Enjoy!

PS: I tend to add extra coconut and chocolate chips because why not! :)
