Two - Ingredient Popsicles

I am always on the search for delicious, all natural and easy to make treats.

That’s why when I found this two-ingredient recipe in my recently gifted NutriBullet I had to give it a try.

Fast forward two weeks and I have already made this recipe twice! Once with mangos and the second time with mixed berries. This is one of the reason’s I enjoy this recipe. Depending upon your taste buds and cravings you can customize the popsicles with your favorite fruit. In my eyes, this is FUN and cooking should be fun.

While this recipe is perfect for a hot summer day, you can make these year round and enjoy a guilt-free treat during any hour of the day.

PS: I highly recommend Trovolo popsicle molds. I did alot of research on popsicle molds because we live in a tiny house and have a small freezer so space and ease of use was imperative. These molds have exceeded my expectations and I have yet to drip anything on me - bonus!


Two - Ingredient Popsicles

Yields ~6 popsicles depending upon mold being used

INGREDIENTS

  • 2 cups of your favorite frozen fruit (mango, mixed berries, whatever you want!)

  • 1 cup of coconut water

DIRECTIONS

  • Set-up your popsicle mold(s) so that they are ready to be filled with goodness

    • I highly recommend the reusable Trovolo groovy mold that comes in a set of 6 and features drip-guard handles. In addition, this set sits upright in a sturdy base to reduce risk of tipping over and holds 4 ounces.

  • Combine both ingredients into your blender

    • I use a Nutribullet but you can use any blender brand.

    • The consistency should be thick yet loose enough so you can pour it from the blender directly into popsicle mold without having to spoon it in.

  • Pour the mixture into your popsicle molds

    • Use a spoon to guide the mixture into the mold in case your worried of making a mess (welcome to my world - ha!)

  • Depending upon the mold you use, secure the stick to the mold

  • Put mold in freezer and allow to set for at least 4 hours

  • Remove popsicle from freezer

  • Enjoy!
