Peanut Butter Cookie Dough Bites

Peanut Butter Cookie Dough Bites
Yields ~12 bites depending upon the size you roll
DRY INGREDIENTS
1 ½ cups gluten-free rolled oats
½ cup almond flour or almond meal
¼ tsp. fine-grain sea salt
2 tbsp. mini dark chocolate chips or chopped dark chocolate
WET INGREDIENTS
2 tbsp. coconut oil
2 tbsp. unsalted creamy almond butter (can substitute with peanut butter or sunflower seed butter if you prefer)
1 tsp. pure vanilla extract
¼ cup pure maple syrup
DIRECTIONS
In a high-speed blender, blend the oats until a fine flour forms. Set aside.
In a large bowl, combine all wet ingredients and beat with a hand mixer until smooth. Add the almoud flour, oat flour from step 1 and salt. Mix again until all ingredients combined.
Fold in the chocolate chips.
Roll the dough into small balls (about 1 tbsp of dough each). If the chocolate chips fall to the bottom of the bowl, press them back into the dough as you roll them. Please the finsihed bites on a plate and/or baking sheet lined with parchment paper.
Store in freezer.
