All you need is the below 9 ingredients, a bowl, measuring cups, a mixing spoon and your hands.
This combination of ingredients will warm up your mouth and the consistency is SO smooth that it reminds me of pumpkin pie in a bite-size ball form. Pop one of these babies in your mouth any time of day and fill up your life with a delicious and satisfying whole food treat.

Pumpkin Chocolate Chip Energy Bites
Yields ~12 balls depending upon the size you roll
DRY INGREDIENTS
1 tbsp. chia seeds
1 ½ tsp. pumpkin spice
If you don't have this exact spice in your cabinet, mix together ¼ tsp. each of the following spices: ground clove, ground ginger, ground nutmeg and cinnamon - its just as tasty! :)
½ tsp. cinnamon
1 ¼ cup gluten-free rolled oats
½ cup unsweetened shredded coconut
¼ mini dark chocolate chips
WET INGREDIENTS
¼ cup canned pure pumpkin puree
½ cup almond butter
¼ cup pure maple syrup
DIRECTIONS
In a large bowl, combine chia seeds, pumpkin spice, cinnamon, rolled oats, coconut and chocolate chips. Hand mix until combined.
Add all wet ingredients to the dry mixture you just created and mix thoroughly.
Roll the mixture into small balls (1 inch diameter) and place in reusable dish-ware that has a cover. You will make ~12-14 balls depending upon size of your roll.
Store in the refrigerator for 4-5 days or you can freeze for months.
