Pumpkin Chocolate Chip Energy Bites (GF, No Bake)

All you need is the below 9 ingredients, a bowl, measuring cups, a mixing spoon and your hands.

This combination of ingredients will warm up your mouth and the consistency is SO smooth that it reminds me of pumpkin pie in a bite-size ball form. Pop one of these babies in your mouth any time of day and fill up your life with a delicious and satisfying whole food treat.

Pumpkin Chocolate Chip Energy Bites

Yields ~12 balls depending upon the size you roll

DRY INGREDIENTS

  • 1 tbsp. chia seeds

  • 1 ½ tsp. pumpkin spice

    • If you don't have this exact spice in your cabinet, mix together ¼ tsp. each of the following spices: ground clove, ground ginger, ground nutmeg and cinnamon - its just as tasty! :)

  • ½ tsp. cinnamon

  • 1 ¼ cup gluten-free rolled oats

  • ½ cup unsweetened shredded coconut

  • ¼ mini dark chocolate chips

WET INGREDIENTS

  • ¼ cup canned pure pumpkin puree

  • ½ cup almond butter

  • ¼ cup pure maple syrup

DIRECTIONS

  • In a large bowl, combine chia seeds, pumpkin spice, cinnamon, rolled oats, coconut and chocolate chips. Hand mix until combined.

  • Add all wet ingredients to the dry mixture you just created and mix thoroughly.

  • Roll the mixture into small balls (1 inch diameter) and place in reusable dish-ware that has a cover. You will make ~12-14 balls depending upon size of your roll.

  • Store in the refrigerator for 4-5 days or you can freeze for months.

  • Enjoy!
