Christmas Ricotta Cookies!

 

Although December can bring cold temperatures and inclement weather to Massachusetts, there is something about the holiday spirit that keeps us warm, merry and bright! Between the decorating, caroling and family gatherings there is typically one common thread this time of year …. SUGAR! While I typically try to limit my sugar consumption, the holidays are an exception because they feature those “once a year” family recipes that are too good to pass up. In my family, we have a few “once a year” recipes that only get made for Christmas - holiday bread, stollen, mint cookies and my personal favorite … ricotta cookies! That’s right … just once a year my mom makes this ricotta cookie recipe and they are a family (and friends!) hit.

Whether you are looking for a new dessert this holiday season or want to bake these delicious treats throughout the year, below is the recipe. I hope you enjoy these cookies as much as our family does!

Ricotta Cookies

INGREDIENTS: Cookie

  • 2 cups or sugar

  • 2 sticks of butter (softened)

  • 15 ounces ricotta cheese (1 small container)

  • 2 tsp. vanilla extract

  • 2 large eggs

  • 4 cups all-purpose flour

  • 2 tbsp. baking powder

  • 1 tsp. salt

INGREDIENTS: Icing

  • 1.5 cups confectionary sugar

  • 3 tbsp. milk

  • Colored sprinkles of your choice!

DIRECTIONS

  • Preheat oven to 350 degrees

  • Blend sugar and butter together until light and fluffy

  • Add ricotta, vanilla extract and eggs to mixture

  • Add flour, baking powder and salt

  • Mix all “cookie” ingredients together until a dough forms

  • Place 1 tbsp. of dough, 1 inch apart on ungreased cookie sheet (I can typically get 12 cookies on a sheet)

  • Cook dough for 15-20 minutes; cookies will be golden and soft. While cookies are baking prepare icing.

  • In a small bowl, mix confectionary sugar and milk till smooth

  • Let cookies cool on drying rack then move to parchment paper, where you can apply icing and sprinkles. Pro Tip: It’s important that you apply sprinkles quickly after putting icing on cookies so they stick!

  • Let cookies sit so icing and sprinkles set

  • Enjoy!

PS: These cookies are amazing served at room temperature or frozen! :)

PSS: The above recipe makes ~4 dozen cookies depending upon how big you make them.
